Keeping files encrypted when at rest

Oui, j'ai besoin d'une solution

New user and have trial desktop version.  I have many files that have been and are created by an offsite person who does transcription for me.  Presently the files are stored in the cloud and accessed via FTP.  I also separtely use mozy sync and like the idea that if a file gets put in mozy sync at different locations it will show up on my pc(s)  I wish for my transcriber to be able to encrypt the word files so only he and I can see them and/or edit them and then to securely send it to the cloud by placing it in a mozy synch folder where it is stored on the mozy cloud and to automatically synchronize with my pcs (or iphone) so that as he puts a file in his folder it ends up encrypted not only in transit but also in the mozy cloud and upon arrival on my mozy sync folders until such time I purposefully unencrypt it using the proper key.  I suspect this is not that unusual a security scenario.

What I am having trouble figuring out with the trial desktop version is that the files even though encrypted are seemingly automatically unencryped for viewing once on my desktop which I gather means if someone gets access to my pc they get to see all the files?.  Furthermore, seemingly to send an encrypted file to a backup program, move it to the mozy synch folder or othewise copy it I first seemingly had to provide my key which then dutifully unencrypts it - end result the file is no longer securely encrypted when it goes to its next destination.

THis is all new to me - what am I  missing?  THx
